Everything Mom and Baby’s Ultimate Green Smoothie:

• 3-4 mashed very ripe bananas
• 1/2 cup packed coconut sugar
• 1/3 cup almond milk
• 1/4 cup coconut oil
• 2 eggs
• 1 cup whole wheat flour
• ½ cup Baby Brain Organics
• 3 teaspoons baking powder
• 1/2 teaspoon salt
• 2 tsp ground cinnamon
• 2 tsp vanilla
• 1/2 cup miniature semisweet chocolate chips
• 1/2 cup raw cacao nibs
Heat oven to 375ºF. Line 12-18 regular-size muffin cups with a muffin liner or grease with coconut oil.
In large bowl, beat bananas, brown sugar, milk, coconut oil and egg with electric mixer on medium speed, or mix with spoon. Stir in flour, Baby Brain Organics, baking powder, cinnamon and salt just until flour is moistened. Fold miniature chocolate chips and nibs into batter.
Divide batter evenly among muffin cups. Bake 13 to 18 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan.

I’ve been sick for literally two weeks, and it’s mostly my own fault. I broke the golden rule about being sick, which is to stay home and rest. Instead I hosted huge dinner parties, went to drunken costume benders, partied in Aspen for 5 nights, flew internationally for work and internationally for a wedding. All in two weeks. So obviously I am not recovering, and it’s a miracle that I don’t have something worse. On top of all that, I have probably spread my viral infection across the globe. But enough about me.

INGREDIENTS
1 cup of all purpose flour
1 cup if quinoa flour
1/4 sugar
1/3 coconut sugar
2 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1/2 cup of baby brain
4 eggs
1 cup of melted coconut oil
2.5 cups of grates carrots
1/2 cup of unsweetened coconut
1 cup of chopped pecans or walnuts.

Mix dry ingredients
Mix eggs and melted oil
Blend with dry fold in carrots, coconut and nuts
Bake for 15-20 minutes at 350
Mix: 5 eggs, 1/3c almond milk, 2tbsp Baby Brain Organics, 1tsp vanilla, 1tsp cinnamon.
Soak bread in egg mixture and cook in frying pan greased with coconut oil. Makes approximately 6 pieces. Enjoy!!
